Day 11 is in the books…here is my review:
Breakfast – Apple, 1/2 Cantaloupe, Grapes (1 cup)
Another breakfast and more fruit!!!
Lunch – Quinoa Lentil Pilaf, Cucumber and Tomato Salad
As I mentioned yesterday, I’m indifferent towards the Quinao Lentil Pilaf, but I did love the Cucumber and Tomato Salad! Not only does it taste great, but also it was easy to make!!! I’m all for something that tastes good and is easy to make!
Dinner – Vegetable-Miso Soup, Swiss Chard (1 cup)
The Vegetable-Miso soup was really good, but it did take a little time to prepare. Although I am becoming more open to cooking during this Reset, I’d still rather not spend a lot of time doing so. I will continue to use some of the recipes I learned during the Reset, but I don’t think this will be one of them. (though the soup did taste very good)
Thoughts after Day 11 of the Reset:
I’m now more than halfway through the Reset…11 days down, 10 to go!!! I have to admit I’m getting slightly bored w/the amount of vegetables that are part of the Reset. Don’t get me wrong, I do like most vegetables, but the amount of vegetables you eat during the Reset is extremely high. Also, I’m looking forward to being able to eat chicken again. I’m also ready to start working out! I want to start INSANITY now, but I’m trying my best to remain patient and wait until I’m finished with the Reset before doing so. I definitely think completing the Reset will better prepare me to complete INSANITY this time.
