Here is my review of Day 12…please keep in mind as you read this, I like the Reset a lot, but I really didn’t like the Day 12 meals:
Breakfast – 1 cup steamed spinach, ¼ sliced avocado, ¾ cup chickpeas mashed, 1 serving Nori Gomasio
I much prefer fruit for breakfast to this meal, but we don’t get to pick and choose what we eat during the Reset…lol. As I mentioned previously, I bought uncooked chickpeas in a bag and they took nearly 3 hours to make…not a fan. Throw in the fact that I dislike spinach and I will not miss this meal going forward.
Lunch – Mediterranean Roast Beets over Microgreen Salad (with ONLY 2 Tbsp. nuts or seeds, ¼ sliced avocado, and fresh lemon or lime juice)
This must have not been my day because I don’t like Beets either! 45 minutes to cook something I dislike?! Ah well, there’s always dinner…which I didn’t like either.
Dinner – 1 serving Kabocha Squash with Garlic-Tahini Filling, and 1 to 2 cups steamed vegetables
Squash!!! Right up there on my list of least favorite foods with Chickpeas and Beets. Add in another 30+ minutes and you have a long day of cooking. I do like steamed vegetables and for this meal, I chose cauliflower and broccoli.
Again, I know the review of these meals is pretty bleak, but it just turned out that there were three meals in one day that I didn’t like.
Thoughts after Day 12:
12 down, 9 more days to go and then it’s on to INSANITY!!! I can finally see the light at the end of the tunnel.
This was a rough day in regards to the meals…they took a long time to cook and I didn’t really like them. I probably should’ve substituted a Shakeology , but as they say hindsight is 20/20.
